24 oysters on the half shell

½ lb. Bacon, cooked and diced

1 package chopped frozen spinach

1 cup heavy cream

1/3 cup seasoned breadcrumbs

dash Tabasco Sauce


1 Tbl. Anchovy Paste

¼ cup dry white wine

¼ cup parmesan cheese, grated

¼ cup red bell pepper, minced

Arrange oysters in a shallow baking dish. In a large fry pan, cook the bacon. When it is crisp, remove bacon from the pan and add onions, sautéing in the bacon fat. Then squeeze the water from the defrosted spinach and add to the onions. Add the cream, Tabasco, anchovy paste, pepper, breadcrumbs and bacon. Cook, stirring until well mixed and thick. Remove from heat and stir in the wine. Spread sauce over each oyster; sprinkle with cheese and minced bell pepper. Bake in a preheated 400 degree oven for about 5 minutes (until cheese melts). Makes 4 servings.
