Great Clam Chowder

Clam ChowderIngredients:
1 pint of chopped clams
1 cup onions, chopped
1 cup celery, finely diced
1 carrot, diced
3 cups potatoes, diced
3/4 cup margarine, melted
3/4 cup flour
1 qt. half and half
1 1/2 teaspoon salt
1/2 tablespoon sugar
Dash of pepper

Directions:

  1. Thaw clams. Drain juice from clams and pour liquid into pan with vegetables. Add enough water to just cover vegetables. Cook until tender.
  2. Meanwhile, in a blender, blend flour, half and half, salt, sugar and pepper. Add melted butter.
  3. Pour into vegetable mixture. Add clams, simmering for about 30 minutes. Taste with salt.
  4. Serve with French bread or crackers.
